Pumpkin Cookies

Every October my family makes these amazing pumpkin cookies.  They are by far the best pumpkin cookies I have had and the brown sugar frosting adds the perfect touch.  This recipe is too good not to share.  I wish I knew where the original recipe came from.  If anybody knows let me know.

Pumpkin Cookies

Cream together-
1/2 Cup of Shortening
1/2 Cup Butter
1 Cup Sugar
1 Cup Pumpkin
1 Egg

then add

2 Cups of Flour
1/2 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Cinnamon
1 Cup of raisins
1 Cup of walnuts

Bake at 375 degrees for 10-12 minutes.
After the cookies cool it's time for frosting!

Brown Sugar Frosting
(I love this frosting so much I usually double it)

3 Tablespoons of butter
4 teaspoons milk
1/2 Cup of Brown Sugar
1 teaspoon of vanilla

Melt butter, milk, brown sugar and vanilla in a saucepan and let cool.
Sift in 1 Cup of powdered sugar.

Eat and Enjoy!

    1. Thanks so much. I wish for calorie sake it was 1/2 a stick but the recipe calls for 1/2 cup. Let me know if you like them!
